Absolutely delicious! I made it for my vegetarian boyfriend (who eats mac & cheese way more than he should) and waited until after he had snarfed down a bowl before telling him it was vegan. He was shocked!

Yummy! I thought this mac-n-cheese was spot on for not being the real thing. I used only a pinch of cayenne but got complaints from some that it was too spicy (I didn't think so.) Makes good leftovers.
