- 2 bay leaves
- 1 teaspoon dried thyme
- 2 teaspoons brown sugar
- 3/4 teaspoon salt
- 1/2 teaspoon ground pepper

This stew is so yummy! It makes a dark and flavorful gravy when done :) I would just add that the celery and carrots take much longer than the time specified in the recipe. I cut them into smaller pieces and cooked the carrots, onion, and celery together for the first step. I gave them a good 20 minutes before adding the rest of the ingredients. Otherwise this is a winner!!! Oh - also - veg broth not oil!!

Worked out well, Roughly doubled the recipe and used corn starch/water to thicken it as necessary. Very hearty

I used water instead of guinness because I couldn't find any vegan options near me. The stew turned out great anyway. It was delicious. I can only imagine how much better it would be if I had used guinness.

turned out fantastic. I added guiness and used turnips instead of parsnips. I am definitley making this again.

My husband was born and raised in Ireland. I only cook vegetarian. sometimes he misses home cooking and traditional stews. this recipe hit the spot! "I could eat this every day!" he said. I left out the nasty parsnips.

It definitely tastes like Guinness, so if you like that dark beer, hop flavor, you will probably enjoy it. My family did not, unfortunately.

Very easy, but I would omit the parsnips. It gives the stew a bitter aftertaste. Otherwise it was good- next time I will omit the parsnips.

Quite could. I will make this again but switch parsnips for turnips and sauté the mushrooms in a stainless steel pan then use a bit of the stout to deglaze the pan and incorporate everything back into the pot.

I did half the amount of tomato paste, took out the parsnips and doubled the amount of potatoes. AMAZINGGGGG!!! Now during our family St Paddy's dinner I can bring this and will no longer feel bummed about not eating the corned beef!

Pretty good. I didn't have parsnips on hand, but it still came out great. I didn't expect the bitterness for the stout, but I still enjoyed the stew.
