Ingredients

- 1 cup raw unsalted cashews
- 1/3 cup filtered water (plus more to thin out if desired)
- 1/4 cup extra virgin olive oil
- 1 cup chopped chives
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. minced garlic
- 1 tsp. prepared yellow mustard
- 1 tsp. apple cider vinegar
- 3/4 tsp. cane sugar (or other sweetener)
- 1/4 tsp. sea salt

Directions
- To soak the cashews, either cover with filtered water for 2 hours or cover with boiling water for 10 minutes, drain, and discard the soaking liquid. Do not use the soaking liquid to make the mayo.
- Throw the ingredients into your KitchenAid® blender in the order listed and add the drained cashews. Secure the lid, remove the center lid cap, and insert the tamper. Blend on high for 30 to 60 seconds using the tamper to guide the ingredients through the blades until smooth and creamy.
- You may need to stop the machine and scrape down the sides of the container so that you don’t get bits of cashew and other ingredients in the mayo when you pour the mayo out of the container.
