I’m a fried rice fan, so I loved this recipe. The intensity of the curry powder makes a big difference. I used only 1 teaspoon, and I can barely taste it (plus, I used more than 1 cup of rice). So next time, I will definitely add more curry powder. Other differences: I used broccolini which cooks more quickly than broccoli, and I used frozen mixed veggies (carrots, corn, peas, green beans) which I warmed up before adding to the rice. I will definitely be making this again

Love it!! I left out the carrots and spinach, but added onions and sweet pepper that I sauteed with the garlic and a cup each of frozen peas and corn

A simple and tasty way to cook a fresh broccoli.. but I guess it could be done better!! But without changing anything, except for quantity of rice - it’s ok.

turned out great! i do agree that the rice portion is more on the smaller side. With that being said, it you can just as easily add an extra cup of rice and season to taste outside of the ginger and garlic. Super easy and quick. the veggie directions are on point.
