  • 1 tablespoon olive oil (or oil of choice)
  • 2 teaspoons ginger (freshly grated (or 1 teaspoon dried ground ginger))
  • 2 cloves garlic (minced, or 1/2 teaspoon dried ground)
  • 2 carrots (small (or about 1/2 cup) chopped in smaller thin pieces so it cooks quickly)
  • 1 head broccoli (chopped into small florets, you can also use some of the peeled stem if you chop into small pieces so that it cooks quickly)
  • salt (to taste)
  • pepper (to taste)
  • 1 tablespoon water
  • 1 cup brown rice (cooked)
  • 1 teaspoon curry powder (or to taste for your desired heat level)
  • 1 cup fresh spinach (chopped, optional)

    I tweeked it a bit. I used Indonesian sweet soy sauce, chili flakes, and one chili. So yummy!

    Great base recipe, add whatever veggies you want. I added green peas and corn to this recipe.

    I love this. I also like that I can add or subtract items and it’s always good (I added zucchini once and decreased the garlic, for example).

    great. loved it. i added marinaded pan fried tofu. you can season the tofu anyway you feel. i used a little bit of teriyaki and sweet n sour sauces.

    Great easy meal! Kids loved it. Would probably cut back to one garlic clove and add more curry next time - couldn't really taste it. Also added one red and one green pepper. Key is to cut carrots thin and broccoli small. Delicious!
