  • 2 teaspoons ginger (freshly grated (or 1 teaspoon dried ground ginger))
  • 2 cloves garlic (minced, or 1/2 teaspoon dried ground)
  • 2 carrots (small (or about 1/2 cup) chopped in smaller thin pieces so it cooks quickly)
  • 1 head broccoli (chopped into small florets, you can also use some of the peeled stem if you chop into small pieces so that it cooks quickly)

I’m a fried rice fan, so I loved this recipe. The intensity of the curry powder makes a big difference. I used only 1 teaspoon, and I can barely taste it (plus, I used more than 1 cup of rice). So next time, I will definitely add more curry powder. Other differences: I used broccolini which cooks more quickly than broccoli, and I used frozen mixed veggies (carrots, corn, peas, green beans) which I warmed up before adding to the rice. I will definitely be making this again

Love it!! I left out the carrots and spinach, but added onions and sweet pepper that I sauteed with the garlic and a cup each of frozen peas and corn

A simple and tasty way to cook a fresh broccoli.. but I guess it could be done better!! But without changing anything, except for quantity of rice - it’s ok.

turned out great! i do agree that the rice portion is more on the smaller side. With that being said, it you can just as easily add an extra cup of rice and season to taste outside of the ginger and garlic. Super easy and quick. the veggie directions are on point.

Used olive oil instead of coconut oil and still turned out very good

I added onions and celery! I love this recipe, next time I will add mushrooms and a little red pepper flakes or Cheyenne pepper. My family really enjoyed it and it was pretty simple to make.

Great Recipe. I used only 1 tsp of ginger and 1/2 tsp hot curry powder and 1/2 tsp regular curry powder to taste. This will definitely be a go to dish.
Great recipe but I thought it needed a little more to it but I would definitely recommend it for someone who is just learning how to use a wok.

Yummy...added a side of sweet potatoes sautéed with Tofurkey Kielbasa and onions. It is a drier meal almost ‘fried rice’ like. So a sauce is nice I went more asian because that’s my skill set. Enjoyed it and it was super easy!
