- 1 cup gluten free all purpose flour (or unbleached all-purpose, I used Bob's Red Mill Gluten Free 1-to-1 Baking Flour, in the blue bag)
- 1 cup coconut sugar
- 1/3 cup Dutch-processed cocoa powder
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2/3 cup almond milk (or milk of choice)
- 1/2 cup brewed coffee (/espresso or additional milk/water)
- 1/4 cup avocado oil (or neutral cooking oil)
- 1 tsp. vanilla extract
- coconut oil
- vegetable shortening
- 2 chocolate frosting (Ingredient, refined sugar free or chocolate buttercream recipe below)
- 1 cup palm shortening (organic, can also use softened unsalted butter, if not dairy-free, or substitute with up to 50% vegan butter)
- 1/2 cup Dutch-processed cocoa powder
- 3 1/2 cups powdered sugar
- 3 Tbsp. milk (choice, if needed to thin)
- 2 tsp. vanilla extract
