Ingredients

  • 1/2 cup coconut oil (melted)
  • 3/4 cup light brown sugar (150g per 3/4 cup, packed)
  • 1/4 cup granulated sugar (50g per 1/4 cup)
  • 1/3 cup nondairy milk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1 1/4 cups vegan chocolate chips

    Directions

    1. Line two baking sheets with silicone baking mats or parchment paper. Set aside.
    2. Place the coconut oil, brown sugar, granulated sugar, nondairy milk and vanilla extract in a medium bowl. Whisk until smooth and combined.
    3. Add the flour, cornstarch, baking soda and salt to the bowl. Mix with a rubber spatula until a smooth dough forms. Fold in the chocolate chips.
