  • 1 butternut squash (medium, peeled and diced, about 4- 5 cups)
  • 1 sweet potato (large, peeled and diced, about 2 cups)
  • 3 cups vegetable broth (low sodium *See note)
  • 1 medium tomato (diced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cumin
  • 1 pinch ground nutmeg
  • 1 1/2 teaspoons Himalayan salt (or preferred salt, more to taste.)

  • 1 tablespoon fresh lemon juice
  • 1/2 cup full fat coconut milk (or any unsweetened plant-based milk)
