  • 3 cups vegetable broth (low sodium)
  • 1 medium tomato (diced)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cumin
  • 1 teaspoon lemon juice
  • 1 pinch ground nutmeg
  • 1 1/2 teaspoons sea salt (more to taste)
  • ground pepper (Fresh, to taste)

Delicious! Tasty, flavoursome - whole family loved it! Doubled the recipe, except the butternut as I didn't have enough and also didn't double the herbs/spices.
