  • 4 cups broccoli florets (chopped)
  • 1 tablespoon olive oil (or 1/4 cup vegetable broth for sauteing)
  • 1 onion (medium, chopped)
  • 2 cloves garlic (minced)
  • 3 cups vegetable broth

  • 1/2 cup raw cashews (soaked for 1 hour)

I enjoyed this this soup! It really feels like there is cheese included in the recipe. This is great for the winter and I will likely make this again. I took the suggestions to add more sweet potato and cashews. Also had to season beyond the prescribed seasonings and added a little more yeast.

It was good straight from the recipe. However, I added a bit of extra seasoning, and a bit more cashew cheese and yeast to mine after it was done. . I just like salty food. I'm not any more, but I was vegan for several years. If I had eaten this then I would have been in heaven.

Fantastic! i used pistacio in place of cashew, doubled the sweet potato, and added tamari in place of yeast, and added a 1/4 of almond cheese.

Delicious! I thought the cheese flavor was amazing for a vegan soup. Mine wasn't super thick, but perhaps adding more broccoli & more cashews/ less water to the cheese sauce would help.

The recipe does not indicate that you need to set aside some onion for the cheesy mix. I added a little more spice and added some previously prepared and quinoa just to add a little bit more nutrition and texture to the recipe. I thought it was very easy and creative.

This soup was just fine although nothing beats actual cheese. I also was a little heavy-handed with my cayenne pepper so I did regret that. Overall if I had followed the recipe more precisely it probably would have turned out a little better.

The nutritional yeast has a good cheesy flavor with an earthy edge the sweet potatoes add to the creamy”ness” and add great flavor. A really great option for vegan broccoli “cheese” soup!

I did use this recipe; sort of 😝. I threw red lentil into the mix and added some spinach. Was happy with the result. I'd definitely give it a try if this sounds like what your looking for.

Thank you so much for this recipe! I am eating it now with my partner and we are both in love! It’s so creamy and the perfect amount of heat. I added some some dough bread chunks on top... Panera better watch out! :):) I will be making the “cheese” sauce again and again!!!

Spectacular!! I think I put a little too much veggie broth so I added about 1/4c quinoa flour. Like others on this post, I will definitely be making that cheese sauce again! Can’t wait to try it on nachos! It reminds me of a queso dip. Can’t say enough good things about this recipe
