A mixture of black beans, vegetables, and spices make these enchiladas a hearty, delicious dinner. They have no meat or dairy, but they're plenty flavorful and will be sure to fill you up!


  • 2 cans red enchilada sauce (10 oz. per can)
  • 1/2 red onion (medium)
  • 1 red bell pepper (medium)
  • 1 jalapeno pepper (small, optional)
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • 1 can black beans (13.5 oz. per can, drained and rinsed)
  • 1 can Hatch mild diced green chiles (4 oz. per can)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 12 soft corn tortillas (6-inch diameter)
  • finely chopped cilantro (optional, for garnish)

    Delicious !!! I used only half of a jalapeño and it was still a little spicy for me, so almost perfect ! I topped with cilantro and guacamole, soooo good !

    This was really really good. We only used half a jalapeño, and used green sauce instead of red. Also something to note if you are using small corn tortillas they break really easily so you have to get them super warm before you use them.

    SPICY. Make sure you get MILD red sauce and maybe lower the amount of jalapeño depending on which one you have (some are spicier then others)

    Didn't like it. It's my first time tasting enchiladas, and I guess it's not for me. I also suggest mashing the beans a little before hand in the can to make it a little easier.

    This was SO delicious. We added yellow rice to the mix and did half flour half corn tortillas. Filling and makes a high yield.
