Description

This toss-together salad is a study in tastes and textures, and more about the assembly than anything else. The only cooking is for the bacon, which is done in the microwave (a no-spatter option), though you can also crisp it in a hot skillet. The bacon is combined with lettuce, diced gorgonzola, grated parmesan, fried onions (the ones from a can), and croutons, and dressed with sherry vinegar and extra-virgin olive oil.

Ingredients

  • 4 slices bacon
  • lettuce
  • gorgonzola (cut in cubes)
  • parmesan cheese (shredded)
  • french fried onions
  • croutons
  • olive oil
  • sherry vinegar
  • honey
  • mustard

Directions

  1. 1Place the bacon slices between sheets of paper towel. Microwave on high for 2 minutes.
  2. 2Add the lettuce, cheeses, onions, and croutons to a bowl and mix well. The quantities may vary according to taste.
  3. 3For the dressing, in a bowl add a drizzle of oil, a few drops of vinegar, a tablespoon of honey and a dollop of mustard. Mix well.
  4. 4Plate the salad and pour the Varese dressing on top.
