Ingredients

  • 200 grams softened butter
  • 80 grams powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 100 grams ground walnuts
  • 280 grams flour
  • orange zest (to taste)
  • granulated sugar (More powdered and, for coating)

Directions

  1. Preheat oven to 170 degrees Celsius.
  2. With an electric mixer, in medium bowl, beat butter, sugar, vanilla extract, and granulated sugar.
  3. Add ground walnuts, flour and orange zest.
  4. Beat until smooth.
  5. Wrap in a plastic wrap and refrigerate for 2 hours.
  6. Divide the dough into small balls and roll them into 2.5 cm cylinders to form small croissants.
  7. Arrange them on a baking sheet lined with parchment paper.
  8. Bake for 15 minutes.
  9. Once out of the oven, carefully roll them on a mixture of icing sugar and granulated sugar.

I am a big fan of croissants anyway, but the vanilla just sent them to the next level. These are so fluffy and light and just full of goodness. I only make them when I am going to get plenty of exercise, because I cannot stop eating them.
