This Tuscan salad is inspired from a recipe from a popular restaurant and makes for a delicious and filling meal. A bed of crisp lettuce is the base for hearty ingredients such as chicken, bacon, and gorgonzola cheese. A light viniagrette is made with dried herbs and sesame seeds for a ton of flavor and a little crunch. You can pack any leftovers in the refrigerator to enjoy for lunch at the office tomorrow or a quick and ready-to-eat dinner.

Ingredients

  • 2 chicken breasts
  • 3 strips bacon
  • salad greens (fresh)
  • gorgonzola cheese (cubed)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon sesame seeds
  • extra-virgin olive oil
  • vinegar

Directions

  1. Grill the chicken breasts and cube them.
  2. Cook the bacon in the microwave. Chop the bacon, and set the pieces on paper towels. Microwave on high for 2 minutes.
  3. Wash the greens well.
  4. In a bowl, whisk together the oregano, thyme, sesame seeds, olive oil and a little vinegar of your choice.
  5. Toss everything in a large bowl and serve.

They call it a VIP salad because it is so similar to those I have had in upscale restaurants. The oregano and thyme and all the other flavors, just mix well together. It’s a salad that eats like a meal.
