    So I looked at this recipe and the one from Food Network's "The Pioneer Woman". I used 2 boxes of Velveeta Cheese (one regular and one Queso Blanco), cubed and put this into my crock pot.. Then browned 2-packages of Jimmy Dean (or store brand) pork sausage (1-regular/1-hot), then the ROT'EL diced tomatoes and green onions, 1 large can of green enchilada sauce, 4-chipolte peppers, 1-cup of Mexican style cheese, and a large can of diced Hatch green chiles. I live in New Mexico (yes, it's in the USA!) and work with people who can cook amazingly! Trying to incorporate my Midwestern style with my Southwestern style.
