  • 3 tablespoons frozen mixed vegetables (with red peppers)

    Directions

    1. 1. Defrost vegetables.
    2. 2. Melt butter or olive oil on a frying pan over medium heat.
    3. 3. Add defrosted vegetables and fry for a couple of minutes until soft and lightly brown.
    4. 4. Pour lightly beaten eggs over the vegetables, season with salt and pepper.
    5. 5. Fry for couple of minutes and when it’s lightly brown flip it over and leave for another 1-2 minutes.
