Directions
- 1. Defrost vegetables.
- 2. Melt butter or olive oil on a frying pan over medium heat.
- 3. Add defrosted vegetables and fry for a couple of minutes until soft and lightly brown.
- 4. Pour lightly beaten eggs over the vegetables, season with salt and pepper.
- 5. Fry for couple of minutes and when it’s lightly brown flip it over and leave for another 1-2 minutes.
