Ingredients

  • 3 pounds potatoes
  • 6 tablespoons i can't believe it's not butter! all purpose sticks
  • 1/4 cup half and half
  • 1/4 teaspoon salt
  • 1 3/4 cups chicken broth
  • 1/8 ground black pepper

Directions

  1. Add potatoes, 1 cup chicken broth and enough cold water to cover potatoes in 4-quart saucepot. Bring to a boil over high heat. Reduce heat and simmer uncovered 15 minutes or until potatoes are tender; drain.
  2. Beat potatoes with remaining ingredients with electric mixer on low speed, or with potato masher, until smooth and creamy.

Liked it very much, only I use butter in place of substitute. Will definitely use this again in the future. Everyone else who ate it seemed to enjoy the new flavors, i.e., chicken broth additive. Will wonder though how they will reheat since there was a little left over, Will try that again soon.
