  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves (minced)

  • 1 stalk green onion
  • 1 carrot (medium, grated)
  • 1/3 apple (peeled, grated, makes 1/3 cup grated apple)
  • 1/4 cup raisins
  • 3/4 cup toasted walnuts (roughly chopped)
  • 1 teaspoon kosher salt
  • ground black pepper (Freshly, to taste)
  • 1 teaspoon dried thyme
  • 1/2 cup oats (regular, ground into a flour, use GF oats for gluten-free option)
  • 1 tablespoon flax seed (ground)
  • 3/4 cup breadcrumbs (I used 2 slices of Ezekiel bread, lightly toasted, and processed in food processor Use GF breadcrumbs for gluten-free)

  • 1 tablespoon balsamic vinegar

    It turned out exceptionally well. I was so concerned what to feed my Niece who was visiting from out of town and not a Vegan. It was a big hit and she even took it as a sandwich to eat on the plane on the return home. Unfortunately, this recipe is a lot of work, and since I cook only for One, the meals are mostly simple and quick . I will keep this recipe for special occasions. Too bad, because it's really delicious.

    Best vegetarian meatloaf I've tried- moist, flavorful, absolutely yummy. Slightly time consuming but worth it. I add ground sage to the lentils when they are cooking, adds a little extra something.
