Ingredients

  • 1/2 lemon
  • 80 grams sugar
  • 180 grams all-purpose flour
  • 1 eggs
  • 100 grams butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 cream
  • powdered sugar

Directions

  1. Preheat the oven to 170 degrees Celsius.
  2. Butter and flour mini pie plates. In a bowl, mix the sugar, flour, egg, butter, vanilla, and baking powder. Knead until a dough forms.
  3. Roll out the pie crust until thin. Place pie crust in the mini pie plates. Place a small piece of wax paper on the pie crusts and fill the pies with dried beans to avoid the crusts from swelling while baking. Bake for 20 minutes.
  4. Warm the two-tone cream using a double boiler. Generously fill the mini pies, mixing to create a marble effect.
  5. Return the pies to the oven for 6 to 8 minutes, then cool completely.
  6. Remove the mini pies from the pie plates and serve sprinkled with powdered sugar.

These mini pies were incredibly easy to make and did not require an abundance of time to make them. The crust on them had the perfect amount of crunch and when you bit into them it was like a party of flavors hit your taste buds. Giving this recipe 4 stars and will be making them for our work party next week.
