Bitter and sweet. White and dark. You will get both combinations in this two chocolate cake that combines the sweetness of white chocolate and the bitterness of cocoa powder. Using only brown sugar and omitting butter in favor of oil, this chocolate cake will satisfy your inner chocolate lover without the guilt of most cakes.

Ingredients

  • 220 grams flour
  • 75 grams cocoa powder
  • 200 grams brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • fine salt
  • 2 large eggs (or 3 medium-sized eggs)
  • 2 natural Greek yogurts
  • 1/3 cup vegetable oil
  • 100 grams white chocolate (chopped, or bar nuggets chopped with a knife)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a small rectangular pan with margarine, and sprinkle it with flour. Set aside.
  3. In a bowl combine the flour, cocoa, sugar, baking powder, baking soda and fine salt. Mix well.
  4. In another bowl whisk the eggs, yogurt, and oil.
  5. Mix the contents of the two bowls, and whisk to a homogeneous dough.
  6. Add the white chocolate, and stir, without beating.
  7. Bake for about 35 minutes.
  8. Remove from oven, let cool.
  9. Cut into squares, and serve.

A really great recipe for a unique cake idea. White chocolate is rarely used in a cake mix, and never with cocoa powder that I have seen. The sweet flavor of white chocolate really evens out the bitterness coming from the cocoa powder. It's a match made in chocolate heaven. It's fluffy and moist after baking. Eat this with a tall glass of milk, and you're all set for a great dessert that features the best of both chocolate worlds.
