Tuscan Chicken with Mediterranean Salsa



  • 14 1/2 ounces petite diced tomatoes (drained)
  • 3 tablespoons capers
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons McCormick Basil Leaves
  • 1 teaspoon oregano leaves (McCormick®)
  • 1/8 teaspoon mccormick red pepper, crushed
  • 1 teaspoon italian seasoning (McCormick® Perfect Pinch®)
  • 1 teaspoon McCormick® California Style Garlic Pepper with Red Bell and Black Pepper
  • 1/2 teaspoon mustard (McCormick®, Ground)
  • 1 1/2 pounds boneless skinless chicken breast halves

    1. For the Salsa, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve.
    2. For the Chicken, mix Italian seasoning, garlic pepper and mustard in shallow dish. Rub seasonings onto chicken to coat evenly.
    3. Coat large nonstick skillet with no stick cooking spray. Heat pan over medium heat. Cook chicken 5 to 7 minutes per side or until cooked through. Serve chicken with Salsa.
