  • 4 cups flour
  • 2 cups sugar
  • 1/2 teaspoon baking powder
  • 4 eggs (lightly beaten)
  • 1 teaspoon vanilla extract
  • 3/4 cup pine nuts
  • 1 1/3 cups almonds (toasted and chopped)
  • 2 tablespoons grated orange peel (finely)

Directions

  1. Preheat oven to 375°F. Line a baking pan with parchment paper.
  2. Sift flour, sugar and baking powder onto a flat surface. Make a well in the center and pour in combined eggs and vanilla. Bring ingredients together to form a dough. Add nuts and orange peel and knead gently to incorporate.
  3. Divide into 3 portions. Roll each piece into a log. Place on prepared pan.
  4. Bake for 20 mins. Cool on wire rack. Cut logs on the diagonal into 1/3 inch-thick slices. Place in a single layer on baking pans.
  5. Bake for 20 mins, until lightly browned. Cool completely on wire rack. Store in airtight containers.
