Turmeric and Coconut Poached Sea Bass

Ingredients

  • 2 stalks lemongrass (outer layers removed, finely sliced)
  • 3 sprigs cilantro roots (fresh, trimmed, leaves picked)
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cumin
  • 3 teaspoons palm sugar (grated, or brown sugar)
  • 2 tablespoons fish sauce
  • 2 tablespoons vegetable oil
  • 1 onion (finely chopped)
  • 1 cup coconut milk
  • 1 cup fish stock
  • 24 ounces sea bass fillets
  • 9 ounces chinese cabbage (trimmed, cut into 4 inch pieces)
  • 2 green onions (sliced)
  • lime wedges
  • steamed rice

Directions

  1. Crush lemongrass and cilantro roots with a mortar and pestle. Add turmeric, ginger, cumin, palm sugar and fish sauce. Grind to combine.
  2. Heat oil in a saucepan over medium-high heat. Sauté paste for 2 mins, or until fragrant. Add onion and cook for 3 mins. Add coconut milk and fish stock. Bring to a simmer then add fish. Reduce heat to medium, cover and poach fish for 4 mins. Add Chinese cabbage and cook, covered, for 4 mins, or until tender.
  3. Garnish fish with cilantro leaves and green onions. Serve with steamed rice and lime wedges.
