Description

This salad is super easy to put together, all it takes is 20 minutes. That makes it a great choice to make for lunch or dinner when you are pressed for time and need a healthy meal to fuel your day. Black beans and turkey sausage add some protein while corn, red onion, and tomatoes all add tons of flavor and a bit of freshness that makes this salad perfect for hot days.

Ingredients

3 turkey sausage (diced)
1/2 bell pepper (diced)
1 tablespoon red onion (minced)
1 tomatoes (diced)
1/2 cup black beans
1/2 cup corn kernels
lettuce
1 clove garlic (minced)
2 tablespoons extra-virgin olive oil
1/2 teaspoon balsamic vinegar
1/2 lime
2 tablespoons salsa (prepared spicy)
salt and ground black pepper

Directions

1Mix the sausage, pepper, onion, tomato, beans, and corn together.
2In a separate bowl, whisk together the garlic, oil, vinegar, lime juice, salsa, salt, and pepper.
3Toss the salad with the dressing and serve over lettuce.
