Ingredients

  • 15 grams corn flour
  • 100 grams ricotta cheese
  • 1 egg
  • 1 tablespoon oat bran
  • 1 teaspoon yeast
  • salt
  • turkey ham
  • 1 slice American cheese

Directions

  1. Preheat the oven to 180 degrees Celsius
  2. In a bowl, add the flour, ricotta cheese, egg, bran, yeast, and a pinch of salt. Mix well.
  3. Spread the dough on a parchment-lined baking sheet.
  4. Bake for 20 minutes until golden brown.
  5. Remove from the oven, fill with turkey ham and cheese; and fold over and cut in half.
  6. Turn the oven's broiler on high.
  7. Place the toast under the broiler and broil for a minute or two until crispy.

This dish is light, flaky, and delicious. It could be made ahead of time and reheated for a quick lunch or even breakfast. I think that a sharp cheddar cheese would be better in the recipe instead though. They could also be stuffed with only cheese for vegetarians, or a combination of spinach and cheese.
