Ingredients

  • 2 whole wheat tortillas
  • 4 spinach leaves
  • 1/2 cucumber (cut in small strips)
  • 1 carrot (cut in small strips)
  • 2 slices cheddar cheese
  • 2 slices turkey breast
  • 2 slices turkey bacon
  • 4 strips red bell pepper (canned)
  • 1 tablespoon mayonnaise
  • 1/2 tablespoon mustard

Directions

  1. Heat the tortillas 15 seconds in the microwave.
  2. Cook the turkey bacon on a skillet on high until it browns.
  3. Spread the mayonnaise and mustard over the tortillas.
  4. Put 2 spinach leaves on each tortilla.
  5. Place the turkey breast, cheddar cheese, cucumber, carrot, red bell pepper, and turkey bacon on each tortilla.
  6. Wrap them up, cut them in half and serve.

I loved these wraps. I made up a bunch of them for lunches for the week and finally got no complaints about boring old sandwiches served too many times. I used Provolone cheese slices in mine, and they turned out great. These wraps can be made up ahead of time, and they will last for a few days. Sometimes, I slice them into one inch sections to make bite size wrap pinwheels. The pinwheels can be served as appetizers on a snack tray too.
