  • 1 onions (medium, chopped)
  • 1/2 teaspoon ground chipotle chile pepper
  • 15.5 ounces black beans (rinsed and drained)
  • 9 ounces tortilla chips (baked)
  • 2 cups shredded cheddar cheese (about 8 oz)
  • 8 ounces ground turkey
  • 1 orange bell pepper
  • 1 tomatoes (large, chopped)
  • 2 tablespoons I Can't Believe It's Not Butter!® All Purpose Sticks
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons lime juice

    Directions

    1. Melt I Can't Believe It's Not Butter!® All Purpose Sticks in 12-inch skillet over medium heat and cook orange pepper and onion, stirring occasionally, 5 minutes or until vegetables are tender. Stir in turkey, beans, lime juice and chipotle chile pepper. Cook, stirring occasionally, 5 minutes or until turkey is throughly cooked. Stir in 1 tablespoon cilantro.
    2. Arrange chips on oven-proof platter, pizza or baking pan. Top with turkey mixture, then sprinkle with cheese and tomato. Bake 2 minutes or until cheese is melted. Sprinkle with remaining 1 tablespoon cilantro and serve, if desired, with sour cream, guacamole and sliced jalapeno pepper.
    3. Preheat oven to 450°.
