Description
Instead of going for the traditional ground beef, we stuffed bell peppers with seasoned ground turkey, rice, and tomatoes, and then baked in the oven with a bubbling layer of cheese on top. The recipe is a Yummly original created by Sara Mellas.
Ingredients

- 4 bell peppers (large)
- 1/2 yellow onion (medium)
- 2 cloves garlic
- 1 Tbsp. extra-virgin olive oil
- 10 oz. ground turkey
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 can petite diced tomatoes (14.5 oz. per can)
- 1 cup cooked rice
- 6 Tbsp. italian blend cheese (shredded)
- nonstick cooking spray

Directions
- Preheat the oven to 375°F.
- Slice the tops from the bell peppers and remove the internal seeds, stem and membrane. Arrange the peppers open side up in a glass casserole dish.
- Finely chop the onion and pepper tops. Mince the garlic.

Added some cayenne pepper for a little spice and used 10oz can of rotel and they turned out very yummy! Husband approved too!

Very good. I used Rotel diced tomatoes and other Mexican seasonings. I also used chicken broth. I made extra "stuffing", added scrambled eggs for breakfast burritos.

Super delicious. Peppers started tipping over in the middle of baking. Next time I’ll try to use some foil rings at the bottom of the pan to help prop them up

Amazing!
I followed the recipe exactly as stated but added a tiny bit of spaghetti sauce. I got rave reviews from my clients!
I cook, prepare and deliver healthy meals to the elderly shut-ins in my community because of Covid 19.
This was really easy to make. I added it to my rotation.

turned out amazing. made a few minor changes to suit me but all in all awesome recipe

The peppers were cooked perfect but the filling had a bland taste. If I make these again i will use taco seasoning on the turkey instead to give them a better flavor.
