This is my own creation. I wanted to try my turkey meatball recipe and add some veggies and crushed tomatoes to it to make this a one pot meal. Stove Top or Crock Pot you decide.

Ingredients

  • 1 pound ground turkey
  • 2 cloves minced garlic
  • 3/4 cup seasoned bread crumbs (or plain)
  • 3/4 cup grated cheese
  • 1 teaspoon salt
  • 1 egg (slightly beaten)
  • 1 teaspoon dried parsley
  • 1/2 cup chicken broth

Directions

  1. Mix the above with hands or large spoon and divide and shape into 1 inch balls. Place in preheated oven 400 degrees and bake 10 minutes or until slightly browned.
  2. Add a small amount of olive or canola oil in a large Dutch oven.. Add minced garlic, 1 cut up potato and 1/2 cup cut green beans. Saute for a few minutes or until veggies start to cook. Add 2 large cans crushed tomatoes, a pinch of salt and pepper and meatballs. Transfer to crockpot and cook on low approx. 4 to 5 hours.
  3. You can also do the above on the stove top and it should be ready in 1 1/2 hours. Serve with fresh bread.
