Description
This simple curry dish requires only 12 minutes and less than an hour to come together. Turkey is the perfect lean protein to use in this meal, it takes on the curry flavor perfectly and makes the dish filling and hearty. Serve it over a bed of rice with a sprinkle of fresh cilantro for a well balanced meal. If you don't have turkey on hand, chicken breasts will work just as well.

- 300 mL milk
- 50 grams coconut
- 500 grams steaks (turkey)
- salt
- ground black pepper
- 2 garlic cloves (chopped)
- olive oil
- 1 onion
- 1 bay leaf
- 1/2 red pepper
- 2 Tbsp. diced tomato
- 2 Tbsp. curry

Directions
- To make the coconut milk, bring to a boil the milk and coconut, and let boil for about 3 minutes. Remove from heat, and sieve through a fine strainer.
- Cut the steaks into small pieces, and season with salt, pepper, and chopped garlic.
- Heat a skillet with a drizzle of olive oil.
