Description

This simple curry dish requires only 12 minutes and less than an hour to come together. Turkey is the perfect lean protein to use in this meal, it takes on the curry flavor perfectly and makes the dish filling and hearty. Serve it over a bed of rice with a sprinkle of fresh cilantro for a well balanced meal. If you don't have turkey on hand, chicken breasts will work just as well.

Ingredients

  • 300 milliliters milk
  • 50 grams coconut
  • 500 grams steak (turkey)
  • salt
  • ground black pepper
  • 2 garlic cloves (chopped)
  • olive oil
  • 1 onions
  • 1 bay leaf
  • 1/2 red pepper
  • 2 tablespoons diced tomatoes
  • 2 tablespoons curry

Directions

  1. To make the coconut milk, bring to a boil the milk and coconut, and let boil for about 3 minutes. Remove from heat, and sieve through a fine strainer.
  2. Cut the steaks into small pieces, and season with salt, pepper, and chopped garlic.
  3. Heat a skillet with a drizzle of olive oil.
  4. Add the chopped onion, and saute over low heat until it is soft.
  5. Add the meat and bay leaf.
  6. Let the meat cook for about 5 minutes, stirring occasionally.
  7. Add the tomatoes, and stir.
  8. Grind the red pepper in the food processor. and add to the skillet.
  9. Add the coconut milk mixed with the curry.
  10. Cook for about 10 minutes.
  11. Serve with white rice.
