  • 1/2 cup plain Greek yogurt
  • 1 teaspoon Sriracha sauce (or more, to desired level of heat)
  • 1 tablespoon lime juice (freshly squeezed)
  • 2 tablespoons water
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • 2 cups cooked rice (warm, white or brown)
  • 15 ounces black beans (canned, drained, rinsed, and warmed)
  • 15.25 ounces whole kernel corn (canned, drained and warmed)
  • 3/4 cup salsa (pico de gallo-style)

    Directions

    1. In a small bowl, whisk together yogurt, Sriracha sauce, lime juice and water, then set aside.
    2. Heat a large, non-stick skillet over medium-high heat.
    3. Add ground turkey, chili powder, garlic powder and cumin to skillet. Cook and stir to crumble until meat is cooked to 165° F, about 6 minutes.
