This appetizer will be the star of your dinner party. With bold and zesty spices such as ginger and cumin these tuna and sweet potato balls are sure to have your friends begging you for the recipe. The eggs and breadcrumbs act as a glue, holding together a family of delicious and healthy ingredients. Baked for about fifteen minutes and rolled in crushed corn flakes, tuna and sweet potato balls are easy to eat and go well with baby greens.

Ingredients

  • 400 grams sweet potatoes (mashed)
  • 400 grams tuna fillets
  • 2 pieces bread (crumbled)
  • 1 tablespoon cilantro (chopped)
  • 1 egg
  • 1 pinch salt
  • 1 teaspoon cumin powder
  • 1 tablespoon ginger powder
  • 1/2 cup cornflakes cereal (slightly crushed)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Mix the mashed sweet potato with the tuna fillets, breadcrumbs, egg, cumin and ginger.
  3. Stir all of the ingredients together well.
  4. With floured hands, form the mixed ingredients into small balls.
  5. Place the balls on a greased baking sheet and put them in the oven for 15 minutes or until they are a nice golden brown.
  6. Serve with a fresh salad.
