Tuna and Sweet Corn Wraps

  • 6 1/2 ounces tuna in spring water (canned, drained)
  • 4 ounces corn kernels (canned, drained)
  • 1 tablespoon mayonnaise
  • 2 whole wheat flatbread (or wrap)
  • 1/2 avocado (small)
  • 1 cup baby spinach leaves

Directions

  1. Flake tuna in a medium bowl, the stir in corn and mayonnaise.
  2. Spread half of each flatbread or wrap with the avocado and season to taste. Spread tuna mixture over avocado, then top with spinach. Roll up tightly to enclose. Refrigerate until ready to serve.
