  • 1 potato (large, diced)
  • water
  • salt
  • 426 grams canned tuna (drained)
  • 2 celery stalks (finely chopped)
  • dried tarragon (crushed)
  • 4 tablespoons low-fat mayonnaise
  • 1 tablespoon mustard
  • ground black pepper
  • 4 pita breads (large)
  • lettuce
  • jalapeno chilies (optional)

    Directions

    1. Cook the potato in water with salt until soft. Drain and let it cool.
    2. In a large bowl, add the tuna, potato, celery, a pinch of tarragon, mayonnaise, mustard, and salt and pepper to taste. Cover with plastic wrap and refrigerate for 1 hour.
    3. Heat the pita breads, then cut them in half. Open the pita, then add lettuce and the tuna salad. Add jalapeno chilies to taste.
