Ingredients

  • 1 1/4 pounds potatoes (small white)
  • 10 ounces tuna in oil (drained, flaked)
  • 1/2 red onion (finely chopped)
  • 1/3 cup mayonnaise
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon capers

Directions

  1. In a large saucepan, cook potatoes in boiling salted water for 10 mins, or until tender. Drain, cool and slice each potato into 4 rounds.
  2. Combine potatoes, tuna, onion, mayonnaise, parsley and capers in a bowl, toss to coat well. Chill before serving.
