Ingredients

  • 18 ounces spiral pasta
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 28 ounces diced tomatoes
  • 4 anchovy fillets (chopped)
  • 1 teaspoon sugar
  • 1/2 teaspoon chili powder
  • 15 ounces tuna (drained, flaked)
  • 2 1/2 ounces black olives
  • 2 tablespoons capers
  • 2 ounces baby spinach
  • crusty bread (to serve)

Directions

  1. Cook pasta in boiling salted water until al dente. Drain.
  2. Meanwhile, heat olive oil over medium heat. Sauté onion and garlic for 2-3 mins, until tender. Add diced tomatoes, anchovy fillets, sugar and chili powder. Simmer for 10 mins. Fold in tuna, olives and capers. Gently heat for 1-2 mins then add pasta and spinach and toss to combine.
  3. Serve with crusty bread.
