Ingredients

  • 142 grams canned tuna (drained)
  • 2 hard boiled eggs (chopped)
  • 1 tablespoon mayonnaise
  • salt
  • ground black pepper
  • 4 whole wheat flour tortillas
  • 1 celery stalk (finely chopped)
  • 1 carrot (grated)
  • 1 tomato (sliced)
  • lettuce (chopped)

Directions

  1. In a bowl, mix the tuna, hard boiled eggs, mayonnaise, and celery. Season with salt and pepper to taste.
  2. Warm the tortillas in the microwave.
  3. In each tortilla, add lettuce, carrot, tuna salad, and tomato.
  4. Roll tightly and serve immediately.

These are really good wraps. I used some fresh spinach and torn kale leaves, thin slices of purple onion, and provolone cheese slices in mine to spruce up the flavor a little. These wraps can be made the night before. Try to drain all of the juice out of the tuna though, because if you don't, the wraps will get soggy.
