  • 1 eggs (slightly beaten)
  • 1/2 cup mayonnaise (not Miracle Whip)
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 dash ground red pepper
  • 3 tablespoons chopped onion
  • 3 tablespoons green pepper (chopped)
  • 1/2 cup unseasoned breadcrumbs
  • 6 1/2 ounces light tuna (undrained)
  • 10 ounces frozen mixed vegetables (cooked and drained)
  • 1/2 cup shredded cheddar cheese (divided)

    Directions

    1. In mixing bowl combine egg, mayonnaise, seasonings, onion and green pepper. Stir in bread crumbs. Mix in tuna. Press gently into 8-inch pie plate with back of spoon. Shape to fit as a pastry shell.
    2. Toss vegetables with 1/4 cup cheese. Turn into middle of shell. Sprinkle remaining 1/4 cup of cheese over vegetables. Bake in preheated 325 degree oven for 20 to 25 minutes.
