Ingredients

  • 1 can tuna (in water/drained)
  • 1/3 cup artichoke hearts (cut into quarters)
  • 6 black olives
  • 1/3 cup bell pepper (canned)
  • 3 tablespoons red onion (chopped)
  • 2 tablespoons chopped parsley
  • 1 pinch oregano (ground)
  • 2 tablespoons mayonnaise
  • 1 lemon
  • 8 slices bread

Directions

  1. Mix all of the ingredients together in a bowl.
  2. Add an equal amount of the tuna mixture to 4 slices of bread and then cover with the other half of bread.

I made these tuna sandwiches for my kids lunch to try and break away from the norm. They liked them so much they asked for it everyday. It tastes so much better than every other tuna sandwich I have made; without the overwhelming tuna flavor. I will make these all the time and would give it 5 stars.
