With canned tuna in your cupboard, easy and protein rich meals are always within reach. This salad makes good use of some other convenience items, including frozen corn and frozen peas as well as crab sticks, all of which need to be thawed before using, but that's done quickly (check the package instructions). The potatoes and carrots are boiled until tender in one pan while the eggs are boiled in another, then everything is combined and the eggs are used as a garnish.


3 potatoes (diced)
2 carrots (sliced)
2 eggs
3 cans tuna
1/2 package crab
1 tomatoes (firm)
1/2 package frozen corn
1/3 package frozen peas


1In a large saucepan, cook potatoes and carrots in plenty of boiling water until tender.
2Remove from heat, drain and cool. In a separate pan, boil eggs.
3Drain tuna well.
4Cut crab into slices.
5Cut tomato into cubes.
6In a bowl, gently mix all ingredients except eggs.
7Slice hard-boiled eggs.
8To serve, arrange salad on plates and garnish with hard-boiled eggs.
