With canned tuna in your cupboard, easy and protein rich meals are always within reach. This salad makes good use of some other convenience items, including frozen corn and frozen peas as well as crab sticks, all of which need to be thawed before using, but that's done quickly (check the package instructions). The potatoes and carrots are boiled until tender in one pan while the eggs are boiled in another, then everything is combined and the eggs are used as a garnish.


  • 3 potatoes (diced)
  • 2 carrots (sliced)
  • 2 eggs
  • 3 cans tuna
  • 1/2 package crab
  • 1 tomato (firm)
  • 1/2 package frozen corn
  • 1/3 package frozen peas


  1. In a large saucepan, cook potatoes and carrots in plenty of boiling water until tender.
  2. Remove from heat, drain and cool. In a separate pan, boil eggs.
  3. Drain tuna well.
  4. Cut crab into slices.
  5. Cut tomato into cubes.
  6. In a bowl, gently mix all ingredients except eggs.
  7. Slice hard-boiled eggs.
  8. To serve, arrange salad on plates and garnish with hard-boiled eggs.
