Ingredients

  • 3 1/2 ounces macaroni
  • 1/2 head broccoli (cut into small florets)
  • 5 ounces frozen peas (thawed)
  • 15 ounces tuna (drained)
  • 15 ounces creamed corn
  • 1 1/4 cups sour cream
  • 2 spring onions (sliced)
  • 1 lemon (zested and juiced)
  • 1/2 pound cherry tomatoes (halved)
  • 1/3 cup cheddar cheese (grated)
  • 1/4 cup breadcrumbs

Directions

  1. Preheat oven to 350°F. Lightly grease a large baking dish.
  2. Cook pasta in boiling salted water until al dente, adding broccoli and peas for final 2 mins. Drain. Toss with tuna, creamed com, sour cream, onions, lemon zest, lemon juice and tomatoes. Season. Transfer to a baking dish. Sprinkle cheese and breadcrumbs over top. Bake 30-35 mins, until bubbling and golden.
