Ingredients

  • 9 ounces elbow macaroni (small)
  • 2/3 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 15 ounces tuna (caned, in water, drained)
  • 1/2 cup coleslaw mix (or shredded purple cabbage)
  • 1/3 cup chives (chopped finely, some set aside for garnish)

Directions

  1. Cook pasta according to package instructions. Drain and refresh under cold water.
  2. Meanwhile, whisk mayonnaise, mustard and 1/4 cup cold water in a large bowl. Season to taste. Add tuna, coleslaw mix and half the chives. Toss to combine.
  3. Add pasta to tuna mixture. Toss to combine. Serve sprinkled with remaining chives.
