Ingredients

  • 4 chile peppers (poblano, grilled, peeled, with seeds removed)
  • 2 cans tuna (in water, drained)
  • 1 potato (small, cubed and cooked until tender)
  • 3 tablespoons onion (minced)
  • 3 tablespoons parsley (minced)
  • salt and ground black pepper
  • 1 can tomato puree
  • 1/2 cup water
  • 1 tablespoon mustard
  • 1 piece onion
  • 1 clove garlic
  • 1/2 teaspoon oregano (ground)
  • cooking spray

Directions

  1. Mix the tuna with the potato, onion, and parsley. Season with salt and pepper.
  2. Fill the chile peppers with the tuna mixture
  3. Make the broth by blending the tomato puree with the water, mustard, onion, garlic, and oregano. Saute the mixture in a hot skillet with a little cooking spray and let simmer until of the desired consistency.
  4. Serve the chiles in the broth.

The broth is the real star in this dish. It is so flavorful and satisfying. I really enjoy it a lot. I allowed mine to simmer a little extra on low to allow the flavors ample time to blend together. Serving the peppers in the broth really helps to combine the flavors together and it’s very good.
