Ingredients

  • 2 cans tuna (in water, drained)
  • 2 chile peppers (jalapeno, seeds and veins removed, minced)
  • 2/3 cup corn flakes (finely ground)
  • 1 egg
  • salt
  • 2 tablespoons vegetable oil
  • lettuce (washed and cut into bite-sized pieces)
  • 1 piece cabbage (shredded)
  • 1 carrot (julienned)
  • prepared salsa
  • limes

Directions

  1. Mi the tuna with the jalapenos, corn flakes, egg, and salt. Form the mixture into 4 croquettes.
  2. Heat the oil in a skillet on medium-high heat. Fry the croquettes for 4 minutes on each side, until golden brown. Blot excess grease with a paper towel, if necessary.
  3. Place the lettuce, cabbage, and carrot on serving dishes and place the croquettes on top. Drizzle with salsa and serve along with the lemon.

These are essentially tuna patties and are very similar to crab cakes or salmon patties. My grandmother used to make these all the time. I love the flaky tender nature of the tuna and the mouthwatering taste is divine. I didn’t put carrots in mine and I used crackers instead of the corn flakes. However, you can play around with this recipe and make it according to your tastes.
