Ingredients

  • 2 cans tuna (in water, drained)
  • 1/2 cup corn (canned, drained)
  • 3 tablespoons cilantro (minced)
  • 3 tablespoons onion (minced)
  • 2 tablespoons light mayonnaise
  • jalapeno peppers (Pickled, minced)
  • 2 tablespoons brine (from the pickled jalapenos, to taste)
  • cucumber (peeled and cut into pieces 2 cm thick.)

Directions

  1. Mix the tuna, corn, cilantro, onion, mayonnaise, jalapenos, and brine together.
  2. Remove almost all the flesh from the cucumber pieces, leaving just a thin layer.
  3. Fill the cucumber pieces with the tuna salad and serve.

These are a fun lunch to give to your kids. I have also seen them served with french bread cubes mixed in with the tuna. I might make some soon to try them.
