  • 3/4 cup sugar
  • 1 3/4 pounds seedless watermelon (peeled and chopped)
  • 3 tablespoons lemon juice
  • 1 pineapple (medium, peeled, cored and chopped)
  • 1 tablespoon passionfruit juice (strained)

Directions

  1. Place sugar and 3/4 cup water in a small saucepan on medium heat. Stir for 3 mins or until sugar dissolves. Increase heat to high; bring to a boil. Boil, without stirring, for 1 min. Cool to room temperature.
  2. Process watermelon in food processor until smooth. Press through a sieve into a bowl; measure 1 cup juice to use. Combine watermelon juice with half the syrup and 2 tbsp of the lemon juice; strain through a fine sieve. Pour into eight 1/3-cup ice pop molds. Freeze 2 hours or until firm.
  3. Process pineapple until smooth. Press through a sieve into a bowl; measure 1 cup juice to use. Combine pineapple juice with remaining syrup, passionfruit juice and remaining 1 tbsp lemon juice to taste. Strain through fine sieve.
  4. Pour pineapple mixture into molds; insert pop sticks. Freeze for 2 hours or until ice pops are firm.
