  • 1/3 cup coconut meat (chopped, optional)
  • 1 cup coconut milk
  • 1 cup frozen mango (chunks)
  • 1 1/2 cups pineapple juice (fresh)
  • 1 vanilla bean seeds (scraped)
  • 1/2 pineapple (cubed, optional)
  • 1 kiwi (sliced, optional)
  • 2 tablespoons ground flax (optional)
  • 3 cups rolled oats
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup whole almonds
  • 1/4 cup coconut oil
  • 3/4 cup pure maple syrup
  • 1 teaspoon instant espresso
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons honey
