I’ve only made the Lemon buttercream thus far, and will make the curd and cake at a later date. The Buttercream is Amazing. I love lemon, more than the average bear, so I substituted the 2 tsp of water with 2 tsp of lemon juice. It was light, sweet, and tangy. The rind does make it a bit lumpy which will give a homemade look, but I feel the rind is too important to the taste to omit for the sake of looks. This butter cream recipe makes the equivalent of 2, 16oz store bought can frosting.

Tastes like lemon meringue pie! The curd balances the sweetness from the buttercream.

I have made this recipe several times. The cake is moist and delicious with just the right amount of lemon. I love the addition of the lemon curd- soooo yummy!

I have been making lemon cakes for several years and this is by far the best lemon cake I have ever made! It is delicious, moist and somewhat tart (lemon curd). Everyone loves this cake, even kids!
