Ingredients

  • 1 kilogram tripe (beef)
  • cold water
  • 1 head garlic (whole)
  • 1 blood sausage
  • 1 chorizo sausage
  • 150 grams ham (Iberian, you can substitute pancetta)
  • 1 onion (chopped)
  • 1 tablespoon flour
  • 1/2 tablespoon paprika

Directions

  1. Wash the tripe well with very cold water, at least 3 times.
  2. In a soup pot, add cold water, the whole garlic head, blood sausage, chorizo sausage, ham, onion, and tripe and boil for 3 1/2 hours.
  3. When everything has softened, add the flour and paprika and boil another 15 minutes.

This is a recipe that you don’t tell people what’s really in it, and they will eat it. It has great flavors and the tripe adds a uniqueness to it. A whole head of garlic is a bit too much garlic for me. I used about 2 cloves and the flavor seemed to be right on target. This one also calls for blood sausage and another variety. I only used one variety and it was just fine. Really, you can play around with this a bit and fix it according to your taste.
