Description

Ingredients

1 kilogram tripe (beef)
cold water
1 head garlic (whole)
1 blood sausage
1 chorizo sausage
150 grams ham (Iberian, you can substitute pancetta)
1 onions (chopped)
1 tablespoon flour
1/2 tablespoon paprika

Directions

1Wash the tripe well with very cold water, at least 3 times.
2In a soup pot, add cold water, the whole garlic head, blood sausage, chorizo sausage, ham, onion, and tripe and boil for 3 1/2 hours.
3When everything has softened, add the flour and paprika and boil another 15 minutes.
