  • 1 tomatoes
  • 1 pepper (habanero, or scotch bonnet)
  • 1 pound oxtails (seasoned with salt and pepper)
  • 2 tablespoons vegetable oil
  • 2 cups shredded carrots
  • 15 ounces pigeon peas
  • 1 tablespoon seasoning (green)
  • 2 cups rice (rinse rice with water until the water runs clear)
  • 4 cups water (or beef broth)
  • 1 tablespoon Better Than Bouillon Beef Base
