Mole sauce is a traditional bold and flavorful sauce that adds depth to any meal. This recipe for Tortilla with Mole Sauce Bake is easy to prepare and takes about 40 minutes to prepare. Ingredients

  • 9 tortillas (room temperature)
  • 3 tablespoons mole paste (prepared)
  • 1 1/2 cups water
  • 1 teaspoon chicken bouillon (powder)
  • 1/2 tomato
  • cooking spray
  • chicken (cooked and shredded)
  • cheese (to taste)
  • cream (Mexican, to taste, may substitute sour cream thinned with milk until of a runny consistency)

Directions

  1. Preheat the oven to 200 Celsius.
  2. Puree the mole paste in the blender with the water, bouillon, and tomato. Place the puree into a saucepan and heat, stirring until thickens. Remove from heat and set aside.
  3. Grease a baking dish with cooking spray and place a layer of tortillas on the bottom, cutting to fit if necessary. Sprinkle with chicken and cheese, drizzle with mole sauce, and top with cream. Repeat the layers and finish with shredded cheese.
  4. Bake for 15-20 minutes, until the cheese melts. Remove from oven, let cool slightly before cutting, and serve.

This is absolutely delicious. Instead of using mole paste, I used this same recipe author’s mole sauce recipe and it was a great move. It kept the entire recipe tasting fresh and authentic. Everyone cleaned their plates with this recipe and I will definitely make it again.
